We really hope the sun is shining where you are. Because it’s lovely here in London Town, and it’s making us feel all summery.

And what’s the best thing about the weather getting warmer? Why, it’s being able to eat ice cream in every single shape and form, of course.

And the ice cream treats that are getting us all riled up for summer today are the brand-new Yo! Sushi mochi ice cream balls.

These exotic mochi balls are being sold in Iceland, and we cannot wait to give them a try. They come in mango and passion fruit flavour, and are described as being “mango and passion fruit sorbet wrapped in soft rice dough.”

Fancy making your own mochi balls? Well, now you can! Thanks to @thisisplanetfood, we now have a recipe for Biscoff mochi balls!

To begin with, you'll need to fill a baking tray with scoops of Biscoff ice cream, ready to be placed back in the freezer for a minimum of two hours or overnight.

Next up, it's time to prepare the mochi dough. Place the rice flour, sugar and water into a bowl and mix. Cover this dough with cling film and microwave it in one minute bursts, making sure to whisk between each burst.

At the point you can't whisk anymore (usually around the third burst), you'll need to grab a wet silicone spatula to bring the dough away from the edges.

After that, stir in some Biscoff crumbs and give it a good mix. Then, dust your surface with cornflour and roll out the dough, ready to cut into small sections.

Once cut into sections, add your ice cream to the middle and gently wrap the mochi dough pieces over them. Then all that's left is for you to pop them back in the freezer to set.

It might sound a teeny-tiny bit fiddly, but it's totally worth the prep!
